The venue required catering facilities to offer traditional Peruvian cooking amongst a contemporary cuisine, and C&C were pleased to be involved in the fast-track scheme.

Following a meeting with Chef Sanjay Dwivedi towards the end of 2016, C&C were delighted to be invited to work on the project by Cotton Thompson Cole and asked to complete the works within one month. With the team starting at the scheme on 21st March, a fast track programme was put in place to ensure client expectations were met, with project completion on 7th April.

Due to the size and offerings of the restaurant, food preparation and cooking spread over three kitchens, with C&C completing works in the bar area and stores, main kitchen, prep areas and fish prep area, dishwash area and the main coldroom. Brands used at the project included C&C Catering Fabrications, Nayati, Fosters, Rational, Genfrost Fridges, Mechline, EPAS, Gamko, and Hoshizaki.
